Cowboy Candy® Coleslaw!
What You Need:
Slaw
1/2 Head - Red Cabbage - sliced thin and chopped
1/2 Head - Green Cabbage - sliced thin and chopped
1 Small - Red Onion - julienne fine
2 Small Carrots - I sliced and diced. I've used grated and matchstick carrots. Both do well but I prefer the matchstick carrots.
1/2 Bunch - Fresh Cilantro - chopped fine (optional)
2 - Green Onions - sliced thin - I've also used Red Onion and it worked great
Dressing
1/2 Cup - Cowboy Candy© (run through the food processor )
1/2 Cup - Sour Cream
1/2 Cup - Buttermilk
1/2 Cup - Apple Cider Vinegar
1/4 Cup - Mayo
1/4 Cup - Lime Juice
3/4 tsp - Lime Zest
1 1/2 TBS - Minced Garlic
3/4 tsp - Ground Cumin
1/2 tsp - Black Pepper
Salt to taste
What You do:
1) Wash your hands, your veggies, the kids, your cat. If you don't have a cat you should probably put the one you have back outside where you got him and wash your hands some more.
2) Prep your veggies. Slice, dice, and chop until your heart's content.
3) In a large bowl mix all the slaw ingredients but not the dressing,
4) In a smaller bowl mix all the dressing ingredients.
5) Add dressing to slaw a little at a time mixing a bit as you go. When you get the exact consistency and creaminess that's right for you then you're done.
6) EAT!!!
